Zesty Green Olive Salad
I N G R E D I E N T S
4 cups romaine or butter lettuce, roughly chopped
1 cup green olives, halved
1 red bell pepper, diced
2 stalks celery, chopped
1 cucumber, diced
Optional: cubed tofu, chicken breast, or other protein
Zesty Dressing:
1/4 cup plain Greek yogurt
1 tbsp olive brine
1 tbsp Dijon mustard
1 tbsp olive oil
2 tsp rice or white wine vinegar
Salt and pepper to taste
D I R E C T I O N S
Combine the lettuce, green olives, bell pepper, celery, and cucumber in a large bowl. Whisk the dressing ingredients together in a small bowl and pour over the salad. Toss and serve.
