Sweet Pepper & Red Onion Frittata with Italian Herbs
I N G R E D I E N T S
1 tbsp olive oil
1 small (or 1/2 large) red onion, finely chopped
1 red bell pepper, finely chopped
1 clove (or 1 tsp) minced garlic
6 whole eggs (or sub egg whites)
1/4 cup milk
1 tsp salt
1 tsp dried Italian seasoning (or 1/2 tsp dried oregano and 1/2 teaspoon dried basil)
Ground black pepper
Optional: chopped parsley, chopped green onion

Sauté the onion and garlic in the olive oil over medium heat in a medium skillet for 2-3 minutes before adding the bell pepper. Cook for another 3 minutes, until the veggies are close to the tenderness you like. Evenly distribute the veggies in the pan.
Whisk the eggs, milk, salt, Italian seasoning, and pepper together in a small bowl. Pour over the veggies and cover the pan. Let cook until the eggs are set, checking at least every minute.
Serve with optional chopped parsley or green onion.
