Sweet Pepper & Red Onion Frittata with Italian Herbs

I N G R E D I E N T S

1 tbsp olive oil
1 small (or 1/2 large) red onion, finely chopped
1 red bell pepper, finely chopped
1 clove (or 1 tsp) minced garlic
6 whole eggs (or sub egg whites)
1/4 cup milk
1 tsp salt
1 tsp dried Italian seasoning (or 1/2 tsp dried oregano and 1/2 teaspoon dried basil)
Ground black pepper
Optional: chopped parsley, chopped green onion

D I R E C T I O N S

  1. Sauté the onion and garlic in the olive oil over medium heat in a medium skillet for 2-3 minutes before adding the bell pepper. Cook for another 3 minutes, until the veggies are close to the tenderness you like. Evenly distribute the veggies in the pan.

  2. Whisk the eggs, milk, salt, Italian seasoning, and pepper together in a small bowl. Pour over the veggies and cover the pan. Let cook until the eggs are set, checking at least every minute.

  3. Serve with optional chopped parsley or green onion.
