Buffalo Cauliflower Bites with Homemade Vegan Ranch
I N G R E D I E N T S
1 head cauliflower, cut into florets
2 tbsp olive oil
3/4 cup all-purpose flour
1/2 cup plant milk
2 tsp garlic powder
1 tsp paprika
1/2 tsp salt
1/2 cup Buffalo wing sauce
For the Homemade Vegan Ranch:
1/2 cup plain unsweetened vegan yogurt (Kite Hill is a good one to try)
2 tbsp plant milk
1 tbsp fresh (or 1 tsp dried) chopped dill
1 tbsp fresh (or 1 tsp dried) chopped parsley
1 tsp garlic powder
1 tsp onion powder
1/2 tsp salt

Preheat oven to 400 degrees F. Grease a baking sheet with the olive oil.
Mix the flour, milk, garlic powder, paprika, and salt until thoroughly combined. Dip the cauliflower florets in the batter, let the excess drip off, and place in a single layer on the baking sheet.
Bake for 10 minutes and then use tongs to flip them over. Bake for another 10 minutes. Remove the cauliflower from the pan and toss in the wing sauce. Lay on the baking sheet again and bake for another 12 minutes, until the outside is crisp and the inside is tender.
Whisk the dressing ingredients together and serve as a dipping sauce for the cauliflower bites.
