Simple Roasted Beets
I N G R E D I E N T S
4 cups beets, cut in roughly 1” chunks (I used about half golden and half standard red beets)
1 tbsp olive oil
3/4 tsp salt
1/4 cup water
D I R E C T I O N S
Preheat oven to 375 degrees F.
Prepare the beets by peeling and cutting them in roughly 1” cubes. Toss them with the olive oil and salt and place them in a 9”x13” glass pan.
Pour the water into the base of the pan. Bake for 1 hour or until beets are tender when poked with a fork.
