Simple Roasted Beets

I N G R E D I E N T S

4 cups beets, cut in roughly 1” chunks (I used about half golden and half standard red beets)
1 tbsp olive oil
3/4 tsp salt
1/4 cup water

D I R E C T I O N S

  1. Preheat oven to 375 degrees F.

  2. Prepare the beets by peeling and cutting them in roughly 1” cubes. Toss them with the olive oil and salt and place them in a 9”x13” glass pan.

  3. Pour the water into the base of the pan. Bake for 1 hour or until beets are tender when poked with a fork.
