Fluffy Yeast-Raised Waffles

3 eggs, separated
2 cups milk
2 tbsp coconut oil, melted
1/3 cup maple syrup
1/2 tsp almond extract
4 cups flour
1/2 tsp salt
2-1/2 tsp instant (quick-rising) yeast

Using a hand mixer or stand mixer, beat the egg whites on high speed until stiff peaks form.
In a medium bowl, beat the egg yolks. Add the milk, coconut oil, maple syrup, and almond extract. Whisk to thoroughly combine.
In a large mixing bowl, whisk the flour, salt, and instant yeast together. Add the wet ingredients to the dry ingredients, using a wooden spoon to mix and break up any large lumps. It’s ok if there are some lumps.
Fold the egg whites gently into the batter. Do not over-mix. Cover the bowl and let sit for 1 hour. This allows the yeast to become active, which makes the waffles fluffy and crisp.
Heat a waffle iron and scoop about 1/2 cup for each waffle. Cook until golden brown.
Serve with Rosemary Infused Blueberry Quick Chia Jam and maple syrup.
