Thai Chicken Fried Rice
I N G R E D I E N T S
2 tbsp olive oil
1 red onion, chopped
2 cloves (about 2 tsp) minced garlic
1-2 cups chopped chicken, shrimp, or extra firm tofu
3 tbsp fish sauce 1 tbsp liquid aminos or soy sauce 3 tbsp hoisin sauce 1 tbsp rice vinegar
3 cups prepared brown or white rice
1 egg, beaten Optional toppings: Sriracha, chopped green onion, crushed peanuts or cashews, lime wedges

In a large deep skillet over medium heat, sauté the onion, garlic, and chicken, shrimp, or tofu in the olive oil for 3 minutes.
Stir in the fish sauce, liquid aminos or soy sauce, hoisin, and rice vinegar. Simmer for 4 more minutes to let the flavors cook into the protein.
Add the rice and let sit without stirring for 1-2 minutes to let the bottom crisp up. Then stir all the ingredients and let sit for another 1-2 minutes.
Make a hole in the middle and pour the beaten egg into it. Cook until the egg starts to solidify, then stir it into the rice thoroughly.
Taste the fried rice and add more soy sauce if more salt is needed. If you prefer it sweeter, add another tbsp of hoisin. If you want a kick, add a tsp or two of sriracha.
Garnish with optional toppings and serve.
