Oatmeal Lace Cookies with Salted Dark Chocolate

This is a slight variation on a delicious Oatmeal Lace Cookies recipe by @addapinch

I N G R E D I E N T S

1 cup (2 sticks) butter
2 1/4 cups brown coconut sugar
2 1/4 cups rolled oats
3 tablespoons all-purpose flour
1 teaspoon salt
1 large egg lightly beaten
1 teaspoon vanilla
1/2 cup semi-sweet chocolate chips
1 tbsp cream, half and half, or milk
1/4 tsp pure almond extract
Salt for sprinkling

D I R E C T I O N S

  1. Preheat oven to 375º F. Line baking sheets with parchment paper.

  2. Heat butter and coconut sugar in a large saucepan over medium heat, stirring frequently, until butter has melted and mixture is smooth. Stir in oats, flour, salt, egg, and vanilla.

  3. Drop cookie batter by the teaspoon onto prepared baking sheets, leaving at least 2 inches between each cookie to allow them to spread.

  4. Bake for 5 -7 minutes, watching closely to prevent them from over-baking. The cookies should be golden brown.

  5. Allow to cool on the cookie sheet for 30 seconds, then remove onto racks to cool completely.

  6. Once cookies have cooled, place the chocolate chips in a small bowl and add the cream or milk. Microwave for 10 seconds and stir. If it doesn’t come together as a creamy chocolate, microwave 5 more seconds at a time until it does. Stir in the almond extract.

  7. Spread the bottom of every other cookie with the chocolate. Sprinkle with a small pinch of salt. Gently press 2 cookies together to create cookie sandwiches.

  8. Store in an airtight container.
